豉汁涼瓜素燒肉扒
Stir-Fried Veggie Fried Steaks with Bitter Melon

材料:
好素素燒肉扒(切件)- 150克
涼瓜(切件)- 50克
杏鮑菇(切粒)- 30克
紅椒(切粒)- 10克
薑(切茸)- 10克
 
調味:
通用蔭豆豉 – 2茶匙
一口田天然海鹽 – 1/3茶匙
瑞春醬油阿伯黑豆醬油 – 1茶匙
糖 – 1茶匙
生抽 – 1茶匙
麻油 – 適量
生粉 – 適量
Ingredients:
Soo Good Veggie Fried Steaks (cut to pcs) – 150g
Bitter Melon (cut into pcs) – 50g
King oyster mushroom (diced) – 30g
Red pepper (diced) – 10g
Ginger (minced) – 10g
 
Seasoning:
TY Black Bean Paste – 2 tsp
UO Natural Sea Salt – 1/3 tsp
Ruei Chun Grandpa Black Bean Soy Sauce – 1 tsp
Sugar – 1 tsp
Soy sauce – 1 tsp
Sesame oil
Cornstarch
做法:
  1. 涼瓜用鹽醃約10分鐘後沖洗,汆水後盛起備用。
  2. 炒香素燒肉扒及杏鮑菇,盛起備用。
  3. 炒香薑茸及蔭豆豉醬。
  4. 加入涼瓜、紅椒、素燒肉扒、杏鮑菇、調味料及生粉水炒勻,即可上碟。
Steps:
  1. Marinate bitter melon with salt for 10 minutes, blanch, drain and set aside.
  2. Sauté fried steaks and king oyster mushroom until fragrant, set aside.
  3. Sauté minced ginger and black bean paste.
  4. Add bitter melon, red pepper, fried steaks, king oyster mushroom, seasoning and cornstarch slurry, cook until thickened. Ready to serve.
